Cider (or cyder) refers to an alscohlic beverage that is primarily made from the fermented juices of specially grown apple varieties. Although popular in France, Ireland, Northern Spain and the Americas (where it is known as Ciderjack), with a production in excess of 150 million gallons of cider per year, the United Kingdom is by far the largest cider manufacturing country in the world.

In the past, cider has suffered a bit from an image problem and is often seen, along with Alcopops etc, as the drink of choice for teenagers owing to its low cost and high alcoholic content (e.g. over 5%) compared to beer. In recent years, however, there has been a significant increase in cider sales in the UK.

Most of this increased success is due to the modern cider manufacturers' marketing strategy which is aimed at getting rid of the rather traditional and parochial image that is often associated with cider drinking and making cider a more up-market beverage with greater appeal to the more sophisticated end of the market.
Ray and Claire created this book after being inspired to find new and interesting ways to make the most of the harvest of wonderful apples from their garden. They created a huge catalogue of ideas, some traditional family favourites and some recipes with a more modern twist but in the process also became interested in the history and the process of making cider.
The book is split into three clear sections, an historical overview, the cider making process and the recipes.
 

1.  The historical overview explores not only when and where cider became popular, but also the different varieties of apples (with strange sounding names such as "Handsome Maud's”, “Morgan's Sweet”, “Royal Wilding”, “Slack My Girdle"!) that are used to make the best beverage, the tradition of Wassail and, not forgetting, Scrumpy.

 
2.   Based on the traditional process still employed by cider makers today, the second section follows the cider making process from the trees to the barrel at Devon's own Winkleigh Cider Company.
 
3.   The main part of the book (i.e. the cookbook) spans recipes using cider and apples from Soups to Sweets from Pies to Preserves and includes such tempting ideas as “Onion and Cider Soup”; “Salmon and Oats in a Cider Sauce”; “Ham in Cider”, “Scrumpy Pheasant”; “Cider scalloped potatoes”, “Apple Strudel”; “Apple and Red Chilli Chutney”; “Tangy BBQ Sauce”, “Witches cauldron”

An easy to understand guide to the planning and building regulation minefield. I used this book not to try to become an expert on the subject myself, but to question a decision of 'experts' in the field. Very briefly my intention is to build an outbuilding as a hobbies/activity room in my garden. It was designed so as not to require planning permission, only to meet building regulations requirements. Because the proposal was nearer to a highway than the existing building, the local planning authority required a planning application together with a £135 fee. A quick check in Building Regulations in Brief index took me to page 149, 5.17 'Outbuildings', and the statement that planning permission in such circumstances is only required if the building proposed is within 20m of the highway. A 'phone call to the planning authority pointing out that my proposal is 25m from the highway and therefore planning permission was not required was accepted by them and permitted development was authorised.  It saved me a lot of aggravation and £135 into the bargain!
